May 2000-Aug 2000 Line Chef/ Sous Chef, Silhouettes Fine Dining Though I started as a prep/ line chef, I quickly moved up the line to become sous chef before the restaurant was sold. I was also trained in plate cost and helped develop the summer menu. Oct 2000-May 2001 Owner/ Chef/ Manager, Shallots I opened this restaurant with the help of two other partners in downtown Hattiesburg. I developed seasonal menus (see attachments), managed employees, and helped keep the books, all while being the head chef at nearly every meal.
