My objective is to gain experience and further my education regarding not only food preparation but also the entire food-service industry.

QUALIFICATIONS
Although my career in food-service has been a relatively short one, it has been one rich with practical lessons and people who expected only the best from me. It is because of those people that I gained invaluable experience in the culinary arts as well as purchasing, employee management, menu development, and financial management. I have tested and utilized all of these skills most recently as owner, designer, manager and chef of a casual-upscale restaurant in Hattiesburg, Ms.

In my first real restaurant experience, I started at the sandwich station, but because I requested new tasks, I was soon made responsible for desserts as well.


Oct 1999-May 2000 Kitchen Assistant, Loyalton Retirement Community
Prepared and cooked large quantities of food for institutional use. I was also trained in food ordering and kitchen management.


May 2000-Aug 2000 Line Chef/ Sous Chef, Silhouettes Fine Dining
Though I started as a prep/ line chef, I quickly moved up the line to become sous chef before the restaurant was sold. I was also trained in plate cost and helped develop the summer menu.


Oct 2000-May 2001 Owner/ Chef/ Manager, Shallots
I opened this restaurant with the help of two other partners in downtown Hattiesburg. I developed seasonal menus (see attachments), managed employees, and helped keep the books, all while being the head chef at nearly every meal.

FIELD EXPERIENCE
All of the biology classes at USM are lab-based, and many of them involved weekly field trips that included collecting and identification. The classes Marine Mammals and Marine Ecology were taken at the Gulf Coast Research Laboratory in Ocean Springs, MS, and involved research cruises, collections, and identification of specimens.
